Featuring my thick and nuggy Chonky Boy Chocolate Chip Cookies, these ice cream sandwiches are the stuff that summer dreams are made of.  If you've ever had the Cookie Ice Cream Sandwich at Disneyland , you are going to LOVE these!  These big and bold chocolate chip cookies are based on a recipe from my culinary school studies at Auguste Escoffier, but with a few modifications to give them that Jennuine touch.  They make the perfectas book for a fat slice of real vanilla bean ice cream.  And those mini chips?  You just gotta have that extra cronch! The Perfect Summer Drink Recipe -- Mango Margaritas Tajin



It's been a long, long time since a flavor has met my palette and left me wondering, "Where has this been all my life?" But a few weeks ago, I had that rare, earth-shaking gastronomical experience when my friend Holly introduced me to the combination of  fresh mango and the Mexican seasoning Tajin (you can read her Mango Magic post HERE). The seasoning, primarily composed of lime, salt and chili, excites all the taste buds and is the perfect compliment to the sweet, tart and tropical mango. I've had Tajin on the brain...bad...really bad. Holly got hers from a friend in Los Angeles.  I was determined to find it locally. After searching obsessively for about a week, I was thrilled and surprised to finally find Tajin at Target in the Mexican food section -- and the mangoes of the world rejoiced!!



On Mother's Day, my husband cooked up a fabulous Mexican feast, so I seized the opportunity to whip up a cocktail to serve with the meal. My head still reeling from the revelation of the Tajin & Mango marriage, I decided to make a margarita in their honor. The sweet and tropical taste of the blended mango is the perfect match for the subtle salt, the tart lime, and light chili taste of the Tajin that rim the margarita glass.



Mango Margarita Tajin
(makes 2-4 margaritas, depending on the size of your glasses)


2 ounces Tequila
1 ounce Cointreau or Triple Sec
8 ounces mango nectar
1/2 cup fresh or frozen mango, cubed
1 ounce sweetened condensed milk
1/2 ounce fresh lime juice
1/2 ounce Rose's Sweetened Lime Juice
2 large handfuls of ice


Fresh lime to rim the glass and garnish
Tajin Seasoning


Fill the rim of a small saucer with Tajin seasoning.  Rim each glass with fresh lime juice.  Then dip the wet rim into the seasoning.  Set aside.


Combine all ingredients in blender and blend till smooth and slushy.


Pour into prepared glasses and garnish with a wedge of lime.
