Chonky Boys: The Chocolate Chip Cookie Ice Cream Sandwiches that Scream Summer!

Image
Featuring my thick and nuggy Chonky Boy Chocolate Chip Cookies, these ice cream sandwiches are the stuff that summer dreams are made of.  If you've ever had the Cookie Ice Cream Sandwich at Disneyland , you are going to LOVE these!  These big and bold chocolate chip cookies are based on a recipe from my culinary school studies at Auguste Escoffier, but with a few modifications to give them that Jennuine touch.  They make the perfectas book for a fat slice of real vanilla bean ice cream.  And those mini chips?  You just gotta have that extra cronch! Thank goodness this recipe only makes 8 sandwiches, otherwise I would be eating them for breakfast lunch and dinner.  This way, my big family can help save me from my inner child diet-saboteur.   Print With Image Without Image Chonky Boy Chocolate Chip Cookie Ice Cream Sandwiches Yield: 8 Author: Jenn Erickson Loaded with chocolate chips and buttery, brown-sugary vanilla flavor, these mall-sized cookies form a perfect partnership with a

Artful Chocolate Dipped Treats with Chocolate Transfer Sheets ~ Tutorial and GIVEAWAY

Q:  How can you make a BAKE SALE BEST SELLER without having to bake?

A:  Make chocolate dipped Oreos on a stick with Chocolate Transfer Sheets!

Chocolate Transfer Sheets are food-grade acetate sheets that have been printed with fun and beautiful cocoa butter patterns. They are easy to use and yield professional, boutique candy store results!

If you're looking for an easy yet sophisticated way to transform the average chocolate dipped treat into something sublimely artful, you'll want to keep a few Chocolate Transfer Sheets in your pantry year-round.

They're lovely on cakes too!
Transfer sheet treats are my favorite item to donate to bake sales, dessert auctions, and school events. They require little time, fuss and money, and are always top sellers!

The transfer sheets can be stored in a cool place for years,so they're always on-call for a last-minute project.

How to Decorate Chocolate Dipped Treats
Using Chocolate Transfer Sheets

Materials/Ingredients
(for 3 dozen Oreos)
Candy Melts or Chocolate (20 oz.)
Package of Oreos
(Peppermint Joe Joes or Nutter Butters work well too)
36 lollipop sticks
(2) Parchment, wax paper or silicone lined baking sheets
(1) Chocolate Transfer sheet (12x16) cut in to 2x2 squares with scissors (Approx. $7)

Tip:  Use a light touch when handling Chocolate Transfer Sheets. Try to avoid touching the printed side, as human body temperature can easily melt or smudge the cocoa butter.

Step 1:  Insert sticks into the cookies. For Oreos I like to place a hand gently on top of the cookie as I insert the stick. Using light pressure from the top helps prevent the cookie from cracking and separating.

Step 2:  Finely chop your chocolate, melt and temper -- or -- use candy melts. Put the melted chocolate in a narrow vessel. I like to use a large water goblet. Holding the stick, dip an Oreo directly in to the melted chocolate.

Step 3:  Pull out and gently shake off excess chocolate.

Step 4:  Place dipped cookie on one of the lined cookie sheets.

Step 5:  Gently apply the transfer sheet, shiny side up (cocoa butter side down). Use the back of a spoon or flat object to gently tap out any air bubbles.

Step 6:  Repeat with remaining cookies. Refrigerate for 20 minutes.

Step 7:  Remove pans from refrigerator. Peel off and discard transfer sheets.

Step 8:  Wrap treats in cello bags and tie off with ribbon.
