Chonky Boys: The Chocolate Chip Cookie Ice Cream Sandwiches that Scream Summer!

Image
Featuring my thick and nuggy Chonky Boy Chocolate Chip Cookies, these ice cream sandwiches are the stuff that summer dreams are made of.  If you've ever had the Cookie Ice Cream Sandwich at Disneyland , you are going to LOVE these!  These big and bold chocolate chip cookies are based on a recipe from my culinary school studies at Auguste Escoffier, but with a few modifications to give them that Jennuine touch.  They make the perfectas book for a fat slice of real vanilla bean ice cream.  And those mini chips?  You just gotta have that extra cronch! Thank goodness this recipe only makes 8 sandwiches, otherwise I would be eating them for breakfast lunch and dinner.  This way, my big family can help save me from my inner child diet-saboteur.   Print With Image Without Image Chonky Boy Chocolate Chip Cookie Ice Cream Sandwiches Yield: 8 Author: Jenn Erickson Loaded with chocolate chips and buttery, brown-sugary vanilla flavor, these mall-sized cookies form a perfect partnership with a

Baking With Olive Oil -- Savory Zucchini & Feta Scones

Image
Last week I shared a recipe for a Luscious Lemon Yogurt Cake .  Today, continuing the theme of "baking with olive oil"  I offer up a savory recipe for Zucchini & Feta Scones. Served alongside a Greek salad and grilled chicken or fish, these Mediterranean inspired scones are the perfect compliment to a light, healthy summer meal! ZUCCHINI & FETA SCONES (makes 1 dozen) 2  cups all-purpose flour 1 Tablespoon baking powder 1 teaspoon salt 1 teaspoon dried oregano, crushed 2 large eggs 1/2 cup extra virgin olive oil 1 1/2 cups (approx. 2 medium) shredded zucchini 1 cup crumbled feta cheese * Zest of one small lemon Preheat oven to 350 F.  Line a baking sheet with a silicone mat or parchment paper. Step 1:  In a medium bowl, sift together flour, baking powder and salt.  Stir in oregano.  Set aside. Step 2:  In the bowl of an electric mixer, beat eggs and oil until smooth and lightened in color. Step 3:  Stir in the zucchini, feta and lemon zest. Step 4:  Stir in the

GET YOUR SMURF ON! A Quick and Easy How-to for Making Your Own Smurf Hat:

Image
I can still remember wheeling out my family's 13" Sony Trinitron on Saturday mornings to watch cartoons with my brother and catching our first glimpse of the teaser commercial for a new show called "Smurfs". And like every other relic from the quintessential 1970/80s childhood, Hollywood is dusting off the boys (and girl) in blue, and giving them a modern spin for new generations in this summer's movie lineup.  One can only hope that it doesn't go the way of the depressingly awful, childhood-classic-massacre of the Where the Wild Things Are movie in 2009.  Yeah, I'm still bitter about that one.  But I digress... My youngest daughter has been utterly captivated by the "coming attractions" for the Smurfs movie, and decided, on her own that when the movie is released, she would like to attend in full Smurf regalia. I'm thankful that she wanted a Smurf hat and not something more challenging like a Harry Potter Hogwarts unif

Family Fun in the Bay Area -- CuriOdyssey at Coyote Point

Image
Looking for something fun to do with your family in the San Francisco Bay Area this summer?  How do you like the idea of a place with hands-on, totally interactive exhibits --  a place where science and wonder meets fun and play?  Add to this getting up-close-and-personal with California wildlife -- from playful river otters and bobcats to eagles and kestrels and a window into an active beehive!   This past weekend, my family had the opportunity to attend the opening of the Backyard Science Exhibit at the  CuriOddysey Museum at Coyote Point in San Mateo (about 20 minutes outside of San Francisco).   We met up with Holly of 504 Main  and her crew, and the kids had a blast experimenting with gears, light, currents, cascades, and sounds.  Our kids range in age from 4 to 10; While the older ones really got in to the lessons and scientific principles behind each exhibit, the little ones were able to enjoy each experience at their own levels, with wonder and curiosity.
