Chonky Boys: The Chocolate Chip Cookie Ice Cream Sandwiches that Scream Summer!

Image
Featuring my thick and nuggy Chonky Boy Chocolate Chip Cookies, these ice cream sandwiches are the stuff that summer dreams are made of.  If you've ever had the Cookie Ice Cream Sandwich at Disneyland , you are going to LOVE these!  These big and bold chocolate chip cookies are based on a recipe from my culinary school studies at Auguste Escoffier, but with a few modifications to give them that Jennuine touch.  They make the perfectas book for a fat slice of real vanilla bean ice cream.  And those mini chips?  You just gotta have that extra cronch! Thank goodness this recipe only makes 8 sandwiches, otherwise I would be eating them for breakfast lunch and dinner.  This way, my big family can help save me from my inner child diet-saboteur.   Print With Image Without Image Chonky Boy Chocolate Chip Cookie Ice Cream Sandwiches Yield: 8 Author: Jenn Erickson Loaded with chocolate chips and buttery, brown-sugary vanilla flavor, these mall-sized cookies form a perfect partnership with a

BACK 2 BLOGGING CHALLENGE ~ MY FIRST POST

I'm excited to be participating in the Back 2 Blogging Challenge from the amazing group of women at SITS (an online sisterhood of 7,000 women bloggers).  If you're a blogger and are interested in participating in this fun, 5-day blog-building powerboost (and a chance to win the sassy washer/dryer set pictured above, compliments of Standards of Excellence, Westar Kitchen and Bath, and Florida Builder Appliances), visit HERE.

The Day 1 Challenge is:  THE FIRST POST YOU EVER WROTE

I started Rook No. 17 back in March of 2009 as a way to share my culinary and craft creations as well as the resources used in the inspiration process with a broader audience.  I didn't know much about blogging at all, and my first post reflects that.  It's purely a list of links.  IF I COULD GO BACK AND DO IT ALL AGAIN, there would have been a greeting, an introduction, and some photos to break up the text.  The content, however, remains as relevant today as it was back then.  I recommended the resources based on experience and conviction, and continue to buy from the same sources with the same enthusiasm as when I originally shared them.

Here is a screenshot of the original post.  As you can see, it's just a list:

zzzzZZZZZZ....
To use the playground vernacular, if I had a "Do-Over", here's what the post would look like.  The essence remains the same ~  My hope is that you'll come away from this post having picked up a few resources that will inspire you to try something new or create something fabulous!
