Chonky Boys: The Chocolate Chip Cookie Ice Cream Sandwiches that Scream Summer!

Featuring my thick and nuggy Chonky Boy Chocolate Chip Cookies, these ice cream sandwiches are the stuff that summer dreams are made of.  If you've ever had the Cookie Ice Cream Sandwich at Disneyland , you are going to LOVE these!  These big and bold chocolate chip cookies are based on a recipe from my culinary school studies at Auguste Escoffier, but with a few modifications to give them that Jennuine touch.  They make the perfectas book for a fat slice of real vanilla bean ice cream.  And those mini chips?  You just gotta have that extra cronch! Warm your spirits and and soul with a Hot Cider Catalonia 
(WARNING:  You may never want to drink regular cider again).

To make the Catalonia, simply add a splash of Chambord (raspberry liquor) and a splash of Frangelico (hazelnut liquor) to a cup of hot apple cider. The Chambord adds depth and the Frangelico adds a wonderful nuttiness (what's a holiday without a little nuttiness?). Top with whipped cream and garnish with a cinnamon stick if you're feeling extra festive! Special thanks to my dear friend Geri for introducing me to the Catalonia.

Gobble down some blue cheese covered grapes ~ they get their green from crushed pistachios.

DESSERT ANYONE?
I've whipped up an original recipe for you.  If you enjoy cheesecake and pumpkin pie and can never get enough chocolate, you're going to love it!  You've probably heard of pumpkin pie cheesecake, but this is a new twist:  Cheesecake Pumpkin Pie ~ the cheesecake and pumpkin pie are in separate layers (rather than combined), so you get the best of both.  There are also dark chocolate chips and a chocolate cookie crust.  This recipe is going to be featured as a guest post on another blog later this month, so stay tuned!

And how about a big hug, for the road?  This guy, "Piplinstein", is the creation of my 9-year old daughter.  She found the skeleton hands in my bag-o-craft stuff and came up with the project on her own.  I must admit, I think he's my very favorite Halloween decoration of all!
