Chonky Boys: The Chocolate Chip Cookie Ice Cream Sandwiches that Scream Summer!

Featuring my thick and nuggy Chonky Boy Chocolate Chip Cookies, these ice cream sandwiches are the stuff that summer dreams are made of.  If you've ever had the Cookie Ice Cream Sandwich at Disneyland , you are going to LOVE these!  These big and bold chocolate chip cookies are based on a recipe from my culinary school studies at Auguste Escoffier, but with a few modifications to give them that Jennuine touch.  They make the perfectas book for a fat slice of real vanilla bean ice cream.  And those mini chips?  You just gotta have that extra cronch! For me, cooking and baking are an absolute passion.  So, when I discover something new for the kitchen that truly knocks my socks off, I want to shout it from the rooftop.  You'll have to imagine the rooftop scene as I belt out my lovestruck serenade for the two pans I recently had the opportunity to review from Calphalon.


First, I'm excited to tell you about the Unison Nonstick 10" Omelet Pan.  Whether used for delicate foods like eggs and fish, or as a way to use less fat when cooking, a nonstick pan that performs with precision can be a chef's best friend.  The Unison Nonstick series offers outstanding performance and versatility like no other nonstick pans I've ever experienced.  Not only do the Unison pans cook foods perfectly on the stovetop, but they can go into the oven and even the dishwasher when their job is done.  The pans are beautifully designed, easy to hold, easy to clean, and produce professional results.  Unison Nonstick features a durable, heavy-guage, hard-anodized aluminum exterior and is available in two task-specific surfaces -- Sear Nonstick to seal in the flavor for juicy braised beef or seared scallops; And the revolutionary Slide Nonstick that allows your culinary creations to slide effortlessly and flawlessly out of the pan.

 

The second piece of Calphalon cookware that really blew me away was the AccuCore Stainless Steel 3-quart Sauté Pan.  I've owned many brands of cookware over the years, but with this single piece, Calphalon completely won me over.  Constructed to last, the AccuCore collection is designed with a copper core surrounded by double layers of aluminum a stainless steel which eliminates hot spots and allows the heat to be distributed evenly throughout the cooking surface of the pan. Whether you're simmering sauces, deglazing the pan, or searing a roast, you can cook with confidence knowing that you don't have to go through the whole song and dance that comes with having a pan with hot and cold spots.  In addition to the sleek design and precision performance, I enjoyed the versatility of my AccuCore sauté pan as I moved it from stovetop to oven, and finally to the dishwasher. 


When I began my review of these two pans from Calphalon, it was a cold and rainy week.  A warm fire, some cozy blankets, and comfort food was on my mind.  So to put the versatility of the cookware to the test, I put my own spin on two American comfort food classics -- Chicken Pot Pie and Upside-down Cake.




My One Pot Chicken Pot Pie was prepared, baked and served in the AccuCore Stainless Steel 3-quart Sauté Pan. The creamy, buttery sauce is loaded with roasted chicken breast, peas, carrots and potatoes and is topped with fluffy and golden buttermilk biscuits.  You can find my recipe HERE.

 

My Whiskey Apple Upside Down Cake starts by caramelizing thinly sliced Granny Smith apples in the Unison Non-stick 10" Omelet Pan.  A light and buttery batter with just a touch of cornmeal is spread on top, then baked to golden perfection.  You can enjoy the recipe HERE.


Both pans performed like a dream and you can see my video review HERE.  My testing may be over, but I've been using little else but these two pans ever since.  In the past weeks, I've baked up a version of my grandma's macaroni and cheese in the AccuCore Stainless Steel 3-quart Sauté Pan, as well as a Gruyere cream sauce as the base of my French Onion Cauliflower Gratin for Thanksgiving.  Just yesterday, I made a delicious Za'atar crusted salmon in the Unison Nonstick 10" Omelet Pan.

With the holidays upon us, I'm excited to start building the rest of My Set with Calphalon and a little help from Santa!
