Chonky Boys: The Chocolate Chip Cookie Ice Cream Sandwiches that Scream Summer!

Featuring my thick and nuggy Chonky Boy Chocolate Chip Cookies, these ice cream sandwiches are the stuff that summer dreams are made of.  If you've ever had the Cookie Ice Cream Sandwich at Disneyland , you are going to LOVE these!  These big and bold chocolate chip cookies are based on a recipe from my culinary school studies at Auguste Escoffier, but with a few modifications to give them that Jennuine touch.  They make the perfectas book for a fat slice of real vanilla bean ice cream.  And those mini chips?  You just gotta have that extra cronch! Thank goodness this recipe only makes 8 sandwiches, otherwise I would be eating them for breakfast lunch and dinner.  This way, my big family can help save me from my inner child diet-saboteur.   Print With Image Without Image Chonky Boy Chocolate Chip Cookie Ice Cream Sandwiches Yield: 8 Author: Jenn Erickson Loaded with chocolate chips and buttery, brown-sugary vanilla flavor, these mall-sized cookies form a perfect partnership with a

About

Hi, I'm Jenn -- Chef, Mother and Educator (and nerd)

I've always been a maker of things.  Some time around 2008 I jumped on the blogging bandwagon as a way to share my recipes and projects with an audience beyond my friends and family. I started as "Rook No. 17", which was re-branded to Jennuine** in 2015 to better reflect the genuine me.  I blog for fun, with no particular agenda or timeline, and at the whim of my current fancies and fascinations.

Career:  I teach a 4-year High School Culinary Arts program, part of ProStart from the National Restaurant Association   I am also an adjunct college professor.  I love teaching, working with young adults and inspiring others to explore the joy of being creative in the kitchen.  My background runs the gamut from high tech to a brief stint in television to owning a small home furnishings and folk art store to creating custom 3D cakes for special events.  Teaching is my passion, and I'm blessed that my journey has led me here.

Family:  I have a wonderful, supportive husband, and five amazing kids.  There's never a dull moment, especially with our extended family of dogs, cats, fish, birds and reptiles.  We live on the California Coast, where I grew up, in a small town we dearly love.

New Posts?:  Prioritizing family and career has led me to a 2-year hiatus.  However, I've been active during that time developing foolproof recipes for beginning through advanced young chefs, testing extensively and coming up with some real gems.  I plan to start sharing them here at Jennuine in 2019.

Thank you for visiting!
Be kind and shake your sparkle everywhere!
