Chonky Boys: The Chocolate Chip Cookie Ice Cream Sandwiches that Scream Summer!

Featuring my thick and nuggy Chonky Boy Chocolate Chip Cookies, these ice cream sandwiches are the stuff that summer dreams are made of.  If you've ever had the Cookie Ice Cream Sandwich at Disneyland , you are going to LOVE these!  These big and bold chocolate chip cookies are based on a recipe from my culinary school studies at Auguste Escoffier, but with a few modifications to give them that Jennuine touch.  They make the perfectas book for a fat slice of real vanilla bean ice cream.  And those mini chips?  You just gotta have that extra cronch! CHEESECAKE MOUSSE AND A LAYERED MOUSSE CAKE TUTORIAL

Back when I was shleppin' flour and sugar for pay, the most popular combination of flavors on my menu was a decadent trio of buttermilk chocolate cake, cheesecake mousse, and raspberries.  My signature "Flour Shop Cheesecake Mousse" is a wonderfully versatile little mousse.  It is perfectly delicious served by the spoonful in a cup with fresh fruit or compote.  It can be piped into a cupcake or scooped on top in place of frosting.  It makes the perfect filling for tart shells and chocolate cups. Recently, I was asked to donate a small cake to a local fund-raising event and decided to resurrect the blissful trinity in the form of a double-mousse cake. The Perfect Summer Drink Recipe -- Mango Margaritas Tajin

It's been a long, long time since a flavor has met my palette and left me wondering, "Where has this been all my life?"  But a few weeks ago, I had that rare, earth-shaking gastronomical experience when my friend Holly introduced me to the combination of  fresh mango and the Mexican seasoning Tajin (you can read her Mango Magic post HERE ). The seasoning, primarily composed of lime, salt and chili, excites all the taste buds and is the perfect compliment to the sweet, tart and tropical mango. I've had Tajin on the brain...bad...really bad. Holly got hers from a friend in Los Angeles.  I was determined to find it locally. After searching obsessively for about a week, I was thrilled and surprised to finally find Tajin at Target in the Mexican food section -- and the mangoes of the world rejoiced!!
