Chonky Boys: The Chocolate Chip Cookie Ice Cream Sandwiches that Scream Summer!

Image
Featuring my thick and nuggy Chonky Boy Chocolate Chip Cookies, these ice cream sandwiches are the stuff that summer dreams are made of.  If you've ever had the Cookie Ice Cream Sandwich at Disneyland , you are going to LOVE these!  These big and bold chocolate chip cookies are based on a recipe from my culinary school studies at Auguste Escoffier, but with a few modifications to give them that Jennuine touch.  They make the perfectas book for a fat slice of real vanilla bean ice cream.  And those mini chips?  You just gotta have that extra cronch! Thank goodness this recipe only makes 8 sandwiches, otherwise I would be eating them for breakfast lunch and dinner.  This way, my big family can help save me from my inner child diet-saboteur.   Print With Image Without Image Chonky Boy Chocolate Chip Cookie Ice Cream Sandwiches Yield: 8 Author: Jenn Erickson Loaded with chocolate chips and buttery, brown-sugary vanilla flavor, these mall-sized cookies form a perfect partnership with a

Inconceivable Sundaes: A Princess Bride Ice Cream Party

Does your family have a favorite movie that you enjoy watching together time and time again?

For us, that movie is 1987 film,
The Princess Bride

It's the perfect blend of clever storytelling,
memorable heroes and villians,
swordplay and rapier sharp wordplay,
and a sly parody of the fairytale genre
presented in a way that only Rob Reiner can.

When presented with an opportunity by Smart & Final and Collective Bias™ to host a family movie night complete with movie-themed ice cream creations, my mind was off and running with ideas for Princess Bride themed sundaes.

Brainstorming the sundaes with family and friends was an exercise in hilarity.  There were so many clever ideas. There's just so much great material to work with.  We could have made ten times the sundaes.  Ultimately, we decided to go with the combinations that were most...

..."INCONCEIVABLE"

Once we narrowed down our menu of Inconceivable Sundaes, I headed off to Smart & Final to buy the ice cream and all the accoutrements for our party.

It's wonderful having a one-stop shop for everything we needed for our Ice Cream Party!  It made this party easy and stress-free.  All our guests had to do was show up, enjoy the movie, and be prepared to eat a lot of ice cream!

For lack of a home movie theater, we opted for the cozy approach and packed into our tiny Victorian parlor room to watch the film. The funniest part of the whole evening was when our dog Westley (named after the movie's hero) darted for the TV screen, barking aggressively at the ROUS (Rodents of Unusual Size).

But let's cut to the chase shall we?  You're here for the sundaes, right?  So, without further ado, I give you...
