Summer Foraging Recipe: Elderberry-Blueberry Jam with Chia Seeds

Image
In the woodland valleys of Central California, Elderflower trees have been in bloom all spring with their prolific, lacy white blossoms.  I've enjoyed making Elderflower syrup, candied elderflowers and sweet Elderflower Tempura.  A few days ago, I noticed that some of the trees are starting to bear fruit -- diminutive, tart little berries, deep purplish-blue growing in heavy clusters.

Inspired by a love of biscuits and jam, foraging, and adapted from a recipe from Simply Beyond Herbs, I whipped up a simple and delicious jam made from the foraged Elderberries, fresh blueberries and using chia seeds for a perfect jammy consistency.

Enjoy and Happy Foraging!

Apple for Teacher -- A Teacher Appreciation Week Snack

This is a quickie -- just wanted to share my twist on the old "apple for teacher" tradition that I brought to school for Teacher Appreciation Week.

Last night I whipped up and portioned a double-batch of my Reduced Fat Peanut Butter Chocolate Chip Apple Dip.  This morning, I bundled a single serving cup of dip with a bag of sliced organic apples.  I tied it all together with a sweet little red polkadot washi tape.

It was a perfect grab-and-go treat for our hard-working teachers.  I hadn't planned on writing a post, but the treat was such a hit that I figured I'd share!
