Chonky Boys: The Chocolate Chip Cookie Ice Cream Sandwiches that Scream Summer!

Image
Featuring my thick and nuggy Chonky Boy Chocolate Chip Cookies, these ice cream sandwiches are the stuff that summer dreams are made of.  If you've ever had the Cookie Ice Cream Sandwich at Disneyland , you are going to LOVE these!  These big and bold chocolate chip cookies are based on a recipe from my culinary school studies at Auguste Escoffier, but with a few modifications to give them that Jennuine touch.  They make the perfectas book for a fat slice of real vanilla bean ice cream.  And those mini chips?  You just gotta have that extra cronch! Thank goodness this recipe only makes 8 sandwiches, otherwise I would be eating them for breakfast lunch and dinner.  This way, my big family can help save me from my inner child diet-saboteur.   Print With Image Without Image Chonky Boy Chocolate Chip Cookie Ice Cream Sandwiches Yield: 8 Author: Jenn Erickson Loaded with chocolate chips and buttery, brown-sugary vanilla flavor, these mall-sized cookies form a perfect partnership with a

For my best bud Geri, it was Menudo. I was a retro junkie, even as a kid, so my heartthrobs were the Monkees. And now, for my youngest daughter, it's Big Time Rush. That's right -- Boy Bands -- Good, squeaky clean pop music fun. Ever since Big Time Rush introduced their boy-band synth-pop on Nickelodeon in 2009, it's been nothing but "James [this]," and, "Kendall [that]," around here. So, when Kool-Aid and Walmart presented me with the opportunity to take my daughter to see the boys live in concert, I knew that this was a chance to make one young fan's dream come true.

Because the BTR tour is sponsored by Kool-Aid, I thought it would be fun to rock out our hair with a powdered drink mix treatment.  My nine-year-old daughter chose classic Grape Kool-Aid.  I went with a Kool-Aid Twister:  Ice Blue Raspberry Lemonade!

The seats were wonderful. Thank you Kool-Aid!

Justin Guthy, Olivia Somerlyn, and Victoria Justice were all fantastic! They put on a fabulous show. But this little fan...well...she was most excited for the main event...

You can see more photos from the concert in my Google+ album, HERE

The VIP tickets included early entrance for the bands' warm-up sessions, plus a meet and greet (with photo op) with the whole band!

Whatcha gotta loose?
Go and make your luck with the life you choose,
If you want it all,
Lay it on the line.
It's the only life ya got,
So ya gotta live it big time."
