Chonky Boys: The Chocolate Chip Cookie Ice Cream Sandwiches that Scream Summer!

Image
Featuring my thick and nuggy Chonky Boy Chocolate Chip Cookies, these ice cream sandwiches are the stuff that summer dreams are made of.  If you've ever had the Cookie Ice Cream Sandwich at Disneyland , you are going to LOVE these!  These big and bold chocolate chip cookies are based on a recipe from my culinary school studies at Auguste Escoffier, but with a few modifications to give them that Jennuine touch.  They make the perfectas book for a fat slice of real vanilla bean ice cream.  And those mini chips?  You just gotta have that extra cronch! Thank goodness this recipe only makes 8 sandwiches, otherwise I would be eating them for breakfast lunch and dinner.  This way, my big family can help save me from my inner child diet-saboteur.   Print With Image Without Image Chonky Boy Chocolate Chip Cookie Ice Cream Sandwiches Yield: 8 Author: Jenn Erickson Loaded with chocolate chips and buttery, brown-sugary vanilla flavor, these mall-sized cookies form a perfect partnership with a

Happy St. Patrick's Day from Rook No. 17!

A few years ago, my daughters and I were playing in the backyard when we discovered a very small patch of clovers.  On a whim, we decided to see if there were any four-leafed beauties to be found.  To our great surprise, we found one!  Then we found another...and another...and another!  We tenderly plucked and preserved all four (one for each member of the family) and considered ourselves very lucky indeed! Today, I scanned one in and posted it here at Rook No. 17 hoping that a little of our clover-luck will be passed your way! Happy St. Patrick's Day from Rook No. 17 (and her chicks)

Vintage Velvet Shamrock Pin Tutorial

Image
A few weeks ago at work, someone put a box of craft supplies on the "Up For Grabs" table. I was so excited when I found this 15 yard spool of vintage green velvet tubing.  With St. Patrick's day just around the corner I knew I could craft it in to something perfect for the occasion! I was always the kid at school who forgot to wear green and hid out in the bathroom at recess so I wouldn't get pinched.  As the years went by I got pretty good at pinch-deflecting responses like, "my toenails are painted green," and the tried and true, "I'm wearing green underwear."  Thank goodness I was never asked to prove the latter.   Now that I have kids of my own, I'm always so busy getting them all spruced up for St. Patty's that I still forget to don a bit o' green.  But not this year!  Using the velvet tubing, some floral wire, and a handful of vintage buttons, I put together some lovely little vintage styled shamrock pins

St. Patrick's Day Decorating -- Lucky Little Shamrock Wreath Tutorial

Image
It's always nice to greet guests with a  bit o' holiday cheer at your front door. With a shamrock wreath that I picked up on sale at Michael's ($2.99), a page of old sheet music, and some sweet little embellishments from my craft box, I was able to put together a quick, yet whimsical St. Patrick's Day wreath that's sure to shimmer a bit of good luck on all who pass through. Lucky Little Shamrock Wreath Materials 1 artificial shamrock wreath 1 page of sheet music, cut into 1/2" strips 1 die cut butterfly Mod Podge Dresden Clear Glaze (or any spray glaze) Silver glass glitter Gold micro glitter Spun cotton toadstools (Mine were purchased from Blumchen ) Lucky Horseshoe charms (I bought some on Ebay a while back, but there are some for sale currently on Artfire HERE) Needle-nosed pliers Hot glue gun Step 1:  Weave the sheet music strips throughout the wreath.  When you have achieved the desired balance and layo

St. Patrick's Day Recipe -- Shamrocks on a Stick

Image
Here's an easy little tutorial for making  *Shamrocks on a Stick* out of ready-made marshmallow coconut  cookies  and green candy coating.   SHAMROCKS ON A STICK INGREDIENTS/MATERIALS Arco Iris Cookies  (these can be found in the Mexican food section of many grocery stores.  I bought mine in the Mexican snack foods section at our local Target store) Green Candy Coating Lollipop Sticks White Sprinkles (Nonpareils) (The Wilton brand can be found in the cake decorating aisle at most major craft stores) Cellophane treat bags and ribbon Step 1:  Line a baking sheet with parchment, wax paper or a silicone mat.  Insert a lollipop stick into each cookie. 2.  Melt candy coating according to package instructions.  I melt mine in the microwave in 1 minute increments on the lowest setting.  To thin the coating, I added a few small drops of canola oil.   Pour nonpareils on to a small shallow saucer and set aside.   3.  Holdi

THE ROMANCE IS OVER ~ in which Duran Duran, St. Patrick, teen heartthrobs and the French Catacombs unite for a common cause ~ IRISH SODA BREAD

Image
Many moons ago, in a time best left buried admist the other scrap and rabble of my youth, I worked for a brief spell at an Irish pub. It was largely a lesson in humility, for reasons I won't delve into here (but I will tell you that the uniform involved a kelly green bow tie and hideously unflattering shorts of the same color). The one good memory of the place is that of their Irish Soda Bread. It was baked fresh every day in the restaurant's enormous basement kitchen. The sweet, toasty, nutty perfume that wafted from the kitchen and through the catacomb-like hallways was the only thing that kept me from succumbing to the heebie jeebies that the subterranean parts of this old building conjured. The bread was nothing much to look at. It was a humble, round loaf; light brown and a little powdery. But one bite, and everyone was hooked. This deceptively simple looking bread possessed an uncanny complexity -- a slight sweetness offset by the salty bite of the baking sod
